Increase heat to high. Add the thinly sliced chicken thighs in a single layer. Let sear 1 minute without moving, then stir-fry until mostly cooked through, about 2–3 minutes more. If using tofu in place of or alongside chicken, pan-fry the tofu first in 1 tbs oil until golden, remove and set aside, then proceed with chicken.
Push the chicken to one side of the pan. Add the julienned red bell pepper and snap peas. Stir-fry 1–2 minutes until bright and still crisp-tender.
If you cooked tofu separately, return it to the pan now and fold gently to combine with the chicken and vegetables.
Sauce & Seasoning
While the proteins cook, whisk together light soy sauce, oyster sauce, fish sauce, dark soy sauce, rice vinegar, and palm sugar in a small bowl until sugar dissolves.
Pour the sauce mixture into the hot pan, stirring to coat the chicken and vegetables. Add the chicken or vegetable stock and bring to a simmer.
Mix the cornstarch with 1 tbs water to make a slurry. Stir the slurry into the simmering sauce to thicken slightly. Cook 1 minute until glossy and sauce clings to the ingredients.
Season with the measured salt and black pepper. Taste and adjust: add more fish sauce for umami, sugar for balance, or a squeeze of lime for brightness.
Finishing & Garnish
Remove the pan from heat and stir in the Thai basil leaves and sliced green onions. The residual heat will wilt the basil while preserving aroma.
Drizzle the toasted sesame oil over the stir-fry and toss once to combine.
Serve the Thai Hot Pepper Triple Charm immediately over hot jasmine rice. Garnish with crushed roasted peanuts and lime wedges on the side. Offer extra sliced chilies or lime for diners to adjust heat and acidity.
