Prepare and marinate chicken
Thinly slice the chicken breasts into 1/4-inch strips or bite-size pieces. In a bowl combine 2 tbs soy sauce, 1 tbs cornstarch and 1 tsp rice wine. Add the chicken and toss until pieces are well coated. Let sit 10–15 minutes while preparing other ingredients.
Heat a large skillet or wok over medium-high heat. Add 1 tbs vegetable oil and swirl to coat. When oil shimmers, add half the chicken in a single layer (do not overcrowd). Cook undisturbed 1–2 minutes until underside is golden, then stir-fry 1–2 minutes until nearly cooked through. Transfer to a plate and repeat with remaining 1 tbs oil and remaining chicken. Chicken should be cooked through but not dry.
Vegetables & Aromatics
While chicken marinates, cut broccoli into bite-size florets and slice green onions. Mince garlic and grate ginger.
Push broccoli to the side and add the minced garlic and grated ginger to the empty space. Stir 20–30 seconds until fragrant but not burned, then mix with the broccoli.
Sauce
In a small bowl whisk together 3 tbs chicken stock, 1 tbs oyster sauce, 1 tsp hoisin, 1 tsp brown sugar and 1 tsp sesame oil until smooth.
Mix 1 tsp cornstarch with 1 tbs cold water to make a slurry and set aside.
Return the cooked chicken and any accumulated juices to the skillet with the broccoli. Pour the prepared sauce over the chicken and broccoli and stir to combine. Bring to a gentle simmer for 1–2 minutes so flavors meld.
Give the cornstarch slurry a quick stir and pour it into the skillet while stirring. Cook 30–60 seconds until the sauce thickens and becomes glossy, coating the chicken and broccoli. Taste and adjust seasoning: add up to 1 tbs soy sauce or a pinch of salt if needed.
To Serve (optional)
Turn off heat and stir in sliced green onions. Drizzle with a little extra sesame oil if desired.
Serve the chicken and broccoli over steamed rice or noodles. Garnish with toasted sesame seeds and red pepper flakes to taste.
