Prep broccoli

Trim the broccoli into bite-size florets (about 1 lb total). If stems are thick, peel and slice into 1/4-inch coins so they cook evenly.

Blanch broccoli

Bring a large pot of salted water to a rolling boil. Add the broccoli and cook 1 minute for very crisp-tender, 2 minutes for more tender. Immediately drain and plunge into a bowl of ice water to stop cooking and preserve bright green color. Drain thoroughly and set aside.

Mince aromatics

While broccoli cools, mince 4 garlic cloves and grate 1 tablespoon fresh ginger. Slice 2 scallions, keeping whites and greens separate if possible (use whites in the stir-fry and greens for garnish).

Sauté aromatics

Heat a large skillet or wok over medium-high heat until hot. Add 2 tablespoons neutral oil. Add the minced garlic and grated ginger and the white parts of the scallions; stir-fry 20–30 seconds until fragrant but not browned.

Mix sauce

In a bowl or measuring cup, whisk together 3 tablespoons low-sodium soy sauce, 1 tablespoon oyster sauce, 1 teaspoon rice vinegar, 1 teaspoon granulated sugar, and 1 cup water or low-sodium broth until sugar dissolves.

Slurry

In a small bowl, stir 1 teaspoon cornstarch with 1 tablespoon of the sauce (or water) to make a smooth slurry; this will thicken the sauce when added.

Combine sauce and aromatics

Pour the prepared sauce into the skillet with the aromatics. Bring to a simmer over medium-high heat, then whisk in the cornstarch slurry. Let simmer 30–60 seconds until sauce becomes glossy and slightly thickened.

Finish and serve

Add broccoli to sauce

Add the drained broccoli to the skillet, tossing or stirring to coat evenly in the garlic sauce. Cook 1–2 minutes more so broccoli heats through and absorbs flavor. Taste and adjust seasoning with 1/4 teaspoon salt and 1/8 teaspoon black pepper as needed.

Finish

Stir in 1 teaspoon sesame oil and 1/4 teaspoon red pepper flakes if using. Toss again to combine.

Garnish and serve

Transfer to a serving dish. Sprinkle with sliced green parts of scallions and 1 tablespoon toasted sesame seeds if desired. Serve hot alongside rice or as part of a larger meal.
