Method
Prepare Sausage
Cook sausage
Heat a skillet (cast iron or nonstick) over medium heat. Add the sausage links and cook 6–8 minutes per side, turning occasionally, until browned and cooked through (internal temperature 160°F/71°C). If using whole links with casings, you can brown whole; if you prefer crumbled sausage, remove casing and crumble into skillet and cook until no pink remains, about 8–10 minutes.
Rest and slice
Transfer cooked sausage to a plate and let rest 3 minutes. If using links, slice each link lengthwise (butterfly) or diagonally into 1/4–1/2" slices so they fit well on the roll.
Grill Vegetables
Assemble and Melt
Preheat broiler to high (or use a toaster oven). Slice the hard roll horizontally, leaving a hinge if desired, and lightly hollow out some of the crumb to make room for fillings. Spread mayonnaise evenly on the cut sides of the roll.
On the bottom half of the roll, spread the caponata in an even layer (about 3 tbs). Arrange the sliced sausage over the caponata in a single layer. Top the sausage with the grilled green peppers and onions.
Place provolone slices over the veggies and sausage. Put the assembled open sandwich under the broiler 1–2 minutes, watching carefully, until the cheese is melted and edges begin to bubble. Alternatively, close the sandwich and warm briefly in a 350°F (175°C) oven for 4–6 minutes until cheese melts.
Finish and Serve
Remove from oven/broiler. If using, sprinkle crushed red pepper flakes and chiffonaded basil or parsley over the cheese. Close the sandwich, press gently, slice in half if desired, and serve immediately.
