Prepare the Shrimp

In a medium bowl, combine the cleaned and deveined shrimp with lime juice, salt, and black pepper. Let it marinate for about 15 minutes.

Cook the Sweet Potato

In a small pot, add the diced sweet potato and cover it with water. Bring to a boil and cook until tender, about 10-12 minutes. Drain and set aside.

Thinly slice the apple and chayote. Set aside for assembly.

Preheat a grill or grill pan over medium heat. Halve the avocado, remove the pit, and char the cut side on the grill for about 2-3 minutes until grill marks appear.

Pour the leche de tigre over the shrimp and vegetable mixture. Gently toss to combine, ensuring everything is well coated.
