Prepare aromatics
Heat a large skillet over medium heat and add 1 tablespoon oil. When hot, add the diced onion and cook, stirring occasionally, until translucent and lightly golden, about 4–5 minutes. Add the minced garlic and cook 30 seconds until fragrant.
Season and warm beans
Add the pinto and black beans to the skillet. Sprinkle the cumin, chili powder, smoked paprika, salt, and black pepper over the beans. Stir to combine and cook 3–4 minutes until beans are heated through and spices are fragrant.
Sauce
Make quick chipotle sauce
While beans warm, whisk together the tomato sauce, minced chipotle in adobo (or chipotle powder), honey, apple cider vinegar, water, and 1/2 teaspoon salt in a small bowl until smooth. Taste and adjust heat or sweetness if desired.
Warm the sauce briefly in a small saucepan over low heat for 2–3 minutes to meld flavors, then remove from heat. Keep warm.
Assemble & Cook Burritos
Prepare tortillas
Warm tortillas one at a time in a dry skillet over medium heat or directly over a gas flame for a few seconds each side until pliable and warmed, about 15–20 seconds per side. Keep wrapped in a clean towel to stay warm.
Assemble
Lay a warm tortilla flat. Spoon about 3/4 cup of the bean mixture down the center. Sprinkle about 1/3 cup shredded cheese over the beans. Drizzle 1–2 tablespoons of the chipotle sauce over the filling and add a spoonful of salsa or pico de gallo and a dollop (about 1 tablespoon) of sour cream if using. Add pickled jalapeños to taste.
Fold
Fold the sides of the tortilla in toward the center, then fold the bottom up over the filling and roll tightly to form a burrito. Tuck ends in as you roll.
Crisp (optional)
In a clean skillet, melt 1 tablespoon butter (or use 1 tsp oil) over medium heat. Place seam-side down and cook the burrito 1.5–2 minutes per side until the tortilla is golden brown and the cheese is melted. Repeat with remaining burritos. Wipe skillet if needed and add a touch more butter or oil.
Serve
Cut burritos in half if desired and serve immediately with extra chipotle sauce, salsa, sour cream, and lime wedges on the side.
