Prepare avocados

Halve the avocados, remove pits, scoop flesh into a medium bowl.

Mash to soft texture

Using a fork or potato masher, gently mash the avocado until mostly smooth but with a few small chunks remaining for texture. Aim for a soft, spreadable consistency — not completely puréed.

Add aromatics and seasonings

Immediately add lime juice to the mashed avocado and stir to combine (this slows browning). Add the finely diced red onion, minced jalapeño, chopped cilantro, ground cumin, and diced tomato if using. Fold gently so you retain a soft texture.

Season and taste

Add kosher salt and a pinch of freshly ground black pepper. Taste and adjust seasoning — add additional lime juice or salt if desired. Cover and set aside at room temperature while you warm tortillas (avoid refrigerating more than necessary to keep guacamole soft).

Warm tortillas

Warm a dry skillet over medium heat and brush a little vegetable oil or melt a small amount of butter. Warm each tortilla 20–30 seconds per side until pliable and slightly charred in spots. Keep wrapped in a clean towel to stay soft.

Prepare protein and toppings

If using pre-cooked protein, reheat gently in a skillet or microwave until just warm. For black beans, season with a pinch of salt and a squeeze of lime. Have shredded lettuce, cheese, and any pickled vegetables or hot sauce ready.

Assemble tacos

Lay a warm tortilla on a plate. Spread about 2–3 tablespoons of the soft guacamole down the center of the tortilla, leaving room at the ends. Top with about 1/3 cup of warmed protein, a small handful (about 2 tablespoons) of shredded lettuce, and a sprinkle (about 2 tablespoons) of crumbled queso fresco or shredded cheese.

Add pickled red onions or quick-pickled cucumber and drizzle with hot sauce or chipotle crema if using. Serve immediately while tortillas and fillings are warm so the guacamole remains soft and spreadable.
