Prepare avocados
Halve the avocados, remove pits, scoop flesh into a medium bowl.
Add aromatics and seasonings
Immediately add lime juice to the mashed avocado and stir to combine (this slows browning). Add the finely diced red onion, minced jalapeño, chopped cilantro, ground cumin, and diced tomato if using. Fold gently so you retain a soft texture.
Season and taste
Add kosher salt and a pinch of freshly ground black pepper. Taste and adjust seasoning — add additional lime juice or salt if desired. Cover and set aside at room temperature while you warm tortillas (avoid refrigerating more than necessary to keep guacamole soft).

Warm a dry skillet over medium heat and brush a little vegetable oil or melt a small amount of butter. Warm each tortilla 20–30 seconds per side until pliable and slightly charred in spots. Keep wrapped in a clean towel to stay soft.
Assemble tacos
Lay a warm tortilla on a plate. Spread about 2–3 tablespoons of the soft guacamole down the center of the tortilla, leaving room at the ends. Top with about 1/3 cup of warmed protein, a small handful (about 2 tablespoons) of shredded lettuce, and a sprinkle (about 2 tablespoons) of crumbled queso fresco or shredded cheese.
