Combine liquids

In a medium saucepan, combine 1 cup water and 1 cup milk. Add a pinch (about 1/4 tsp) of salt. Place saucepan over medium-high heat and bring the mixture just to a gentle boil (small bubbles around the edge).

Add oats

Stir in 1 cup rolled oats. Reduce heat to medium-low so the mixture simmers gently.

Cook until creamy

Cook, stirring occasionally to prevent sticking, for 5–8 minutes until the oats have absorbed most of the liquid and reached your desired consistency. For thicker oatmeal cook toward the longer end; for looser oatmeal, remove earlier. If the oats become too thick, stir in a splash (1–2 tbs) of milk or water to loosen.

Finish and flavor

Remove the saucepan from heat. Stir in 1 tablespoon brown sugar or maple syrup, 1/2 tsp vanilla extract (if using), and 1/4 tsp ground cinnamon (if using). Taste and adjust sweetness or cinnamon as desired.

Serve with toppings

Divide the oatmeal between bowls (this recipe yields about 1 large or 2 small servings). Top with sliced banana, 1/2 cup berries or diced apple, 2 tablespoons chopped nuts and 1 tablespoon chia or flaxseed if desired. Drizzle a little extra milk or maple syrup on top if preferred.
