Method
Make Margarita Mix
Juice citrus
Roll limes and lemons firmly on the counter to loosen juices. Cut and juice enough limes to yield 1 cup fresh lime juice and enough lemon to yield 1/4 cup lemon juice. Strain through a fine-mesh sieve into a measuring cup to remove pulp and seeds.
Sweeten and combine
Measure 1/2 cup agave syrup into a medium mixing container. Add the 1 cup lime juice and 1/4 cup lemon juice and whisk until fully combined.
Add orange liqueur
Stir in 1/2 cup orange liqueur (Cointreau/Triple Sec) until homogeneous. Taste and adjust: for a sweeter mix add up to 1-2 tablespoons more agave; for brighter citrus add a teaspoon more lemon juice.
Store
Transfer the mix to a sealed container and refrigerate if not using immediately. Mix will keep 5–7 days refrigerated.
Build Each Margarita
Prepare glass
Rub a lime wedge around the rim of a chilled rocks or coupe glass. Spread 1 tsp coarse salt on a small plate and press the glass rim into the salt to coat. Fill the glass with 1/2 cup fresh ice and set aside.
Shake
In a cocktail shaker, add 1 cup ice, 2 oz blanco tequila and 3 oz margarita mix. Secure lid and shake vigorously for 10–15 seconds until the exterior of the shaker is frosty and well chilled.
Garnish
Garnish with the reserved lime wedge on the rim or floated in the drink. Serve immediately.
Scaling note
The recipe quantities under 'Cocktail' are for one serving. To make a pitcher, multiply tequila by number of servings and use 1.5 oz margarita mix per serving (or maintain the 2:3 tequila:mix ratio). For a 6-serving pitcher: 12 oz tequila, 9 oz mix; add 2 cups ice to chill when serving.
