Prepare and Fry

If using large packaged chicharrones that are not fully puffed, break into bite-size pieces. Heat 1 cup vegetable oil in a heavy skillet or deep pot over medium-high heat until it reaches 350°F (175°C) or forms a steady sizzle when a small piece of pork rind is dropped in. Working in batches to avoid overcrowding, carefully add chicharrones and fry 20–45 seconds until puffed evenly and crisp. Remove with a slotted spoon to a paper-towel–lined tray. Sprinkle immediately with 1/2 tsp salt and let cool. Keep warm or hold at room temperature; they crisp further as they rest.

If using pre-puffed chicharrones that are already crisp, you can skip frying. Warm briefly in a 350°F (175°C) oven for 3–4 minutes or in a dry skillet 30–60 seconds to refresh texture, then salt to taste.

Verde Sauce (Salsa Verde)

Roast Tomatillos and Peppers

Preheat broiler or a heavy skillet. Place husked tomatillos, serranos, and jalapeño (if using) on a baking sheet under the broiler about 4–6 inches from heat, or char them directly in a dry skillet over medium-high heat. Roast/char, turning occasionally, until tomatillos are blistered and softened and peppers are blackened in spots, about 6–8 minutes under broiler or 6–10 minutes in skillet. Remove and let cool slightly.

Blend Sauce

In a blender or food processor combine roasted tomatillos and peppers, 1/2 cup quartered white onion, 2 peeled garlic cloves, 1/2 cup packed cilantro, 2 tbs fresh lime juice, 1 tsp salt, 1/4 tsp ground cumin and 1 tsp vegetable oil. Pulse to a coarse puree, then blend until smooth. If sauce is too thick, add up to 2 tbs water to reach a pourable but slightly thick consistency that will coat chicharrones. Taste and adjust salt or lime as needed.

Finish

For a brighter flavor, transfer sauce to a bowl and stir in an additional 1–2 tsp lime juice or a pinch of sugar if very tart. Keep sauce warm or at room temperature; if making ahead, rewarm gently before serving.

Assemble & Serve

Place warmed/fried chicharrones on a serving platter. Spoon or drizzle 3–4 tbs of the verde sauce over the chicharrones so each piece gets a light coating. You want them sauced but still crisp; serve extra sauce on the side for dipping.

Sprinkle crumbled queso fresco or cotija (2 tbs) evenly over the sauced chicharrones, scatter 1 tbs chopped cilantro, and serve with lime wedges for squeezing at the table.

Serve immediately so chicharrones remain crisp under the sauce. Leftovers will soften; store sauce separately in the refrigerator up to 3 days and re-crisp chicharrones briefly in a 325°F oven before serving.
