Protein
Cook aromatics
Heat vegetable oil in a large skillet over medium-high heat. Add chopped onion and cook, stirring occasionally, until softened and translucent, about 4–5 minutes. Add minced garlic and cook 30 seconds until fragrant.
Brown meat
If using ground beef: add the ground beef to the skillet and break it up with a spoon. Cook until no longer pink, about 6–8 minutes. If using pre-cooked diced chicken: add the chicken and heat through, about 3–4 minutes.
Season and simmer
Stir in chili powder, ground cumin, paprika, salt, and black pepper. Pour in 1/2 cup water or broth, scrape up any browned bits, reduce heat to medium-low and simmer until slightly thickened and most liquid has evaporated, about 3–5 minutes. Taste and adjust seasoning.
Beans & Rice (optional)
If using beans and rice, stir the drained black beans and cooked rice into the skillet with the meat and heat through 2–3 minutes so flavors blend. Remove from heat.
Cheese & Extras
Keep shredded cheese, sour cream, cilantro, lime wedges and pickled jalapeños ready for assembly. If you prefer melted cheese inside the burrito, sprinkle cheese on the warm meat mixture briefly off heat so it begins to melt.
Tortillas & Sauce
Warm tortillas
Warm a large skillet or griddle over medium heat. Lightly brush each tortilla with a little butter or oil and warm 20–30 seconds per side until pliable and slightly golden. Alternatively, microwave tortillas wrapped in a damp paper towel for 20–30 seconds.
Warm the salsa or burrito sauce in a small saucepan or microwave until heated, and mix in hot sauce if using.
Assembly & Garnish
Lay a warmed tortilla flat. Spoon about 1/2 cup of the meat mixture down the center of each tortilla (adjust amount to personal preference). Add about 1/4 cup black beans and 1/4 cup rice if using. Top with 1/4 cup shredded cheese, 1 tablespoon sour cream, a sprinkle of cilantro, and pickled jalapeños if desired. Spoon 2–3 tablespoons of warmed salsa or sauce over the fillings.
Fold the sides of the tortilla toward the center, then roll the bottom up over the filling to form a tight burrito. Place seam-side down on the warm skillet and sear 1–2 minutes per side to seal and crisp slightly, if desired.
Serve immediately with lime wedges on the side and extra sauce or hot sauce to taste.
