Pasta Preparation

    Cook the Tortellini

    In a large pot, bring salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente, usually about 3-4 minutes. Drain the tortellini and set aside.

Sauce Preparation

    Make the Vodka Sauce

    In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add 3 minced garlic cloves and sauté for about 1 minute until fragrant.

    Add Red Pepper Flakes

    Stir in 1 teaspoon of crushed red pepper flakes and sauté for another 30 seconds to release flavor.

    Add Vodka

    Pour in 1 cup of vodka, allowing it to simmer for about 2-3 minutes to reduce slightly.

    Add Tomatoes and Cream

    Stir in the can of crushed tomatoes and 1 cup of heavy cream. Mix well and bring the sauce to a gentle simmer. Season with 1 teaspoon of salt and 1 teaspoon of black pepper.

    Incorporate Cheese

    Once the sauce is well combined and heated through, add 1 cup of grated Parmesan cheese and stir until melted and creamy.

    Combine with Tortellini

    Add the cooked tortellini to the sauce and toss gently to coat all the pasta with the sauce.

    Finish with Basil

    Remove from heat and stir in 1 cup of chopped fresh basil. Adjust seasoning with more salt and pepper if needed.
