Crust Preparation

Prepare the crust
In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated with butter.

Form the crust
Press the mixture firmly into the bottom of individual springform pans or cupcake liners, creating an even layer. Set aside.
Filling Preparation

Mix the filling
In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth and creamy.

Add sugar and sour cream
Gradually add the granulated sugar and mix until combined. Then add in the sour cream and vanilla extract, mixing until smooth.

Incorporate eggs
Add the eggs one at a time, mixing on low speed after each addition until just incorporated.

Finish with flour
Finally, sprinkle the flour over the mixture and gently fold it in until just combined. Be careful not to overmix.
Baking

Pour the cheesecake filling evenly over the prepared crusts in the individual pans. Bake in a preheated oven at 325°F (163°C) for 25-30 minutes or until the edges are set and the center is slightly jiggly.

Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for about an hour. Then, refrigerate for at least 4 hours or overnight to set completely.
