Crust Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C).

Mix Ingredients
In a medium mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated and the mixture resembles wet sand.

Form the Crust
Press the crumb mixture firmly into the bottom and up the sides of individual tart or pie dishes (about 4-5 inches in diameter).

Bake the Crust
Bake the crust in the preheated oven for about 8-10 minutes, or until golden brown. Remove from oven and let cool while preparing the filling.

Mix Filling Ingredients
In a large bowl, whisk together the sweetened condensed milk, key lime juice, egg yolks, and lime zest until smooth and well combined.

Fill the Crusts
Pour the filling mixture evenly into the cooled crusts, filling each to the top.

Bake the Filling
Return the filled crusts to the oven and bake for an additional 15-20 minutes, or until the filling is set but still slightly jiggly in the center.

Cool the Pies
Remove the pies from the oven and allow them to cool at room temperature. Once cooled, refrigerate for at least 2 hours, or until chilled.

Whip Cream
In a medium bowl, beat the heavy whipping cream with a hand mixer or stand mixer until soft peaks form. Gradually add the powdered sugar and continue to beat until stiff peaks form.

Top the Pies
Once the pies are chilled, pipe or spread the whipped cream over the top of each pie.

Garnish each pie with a slice of lime on top before serving.
