Cake Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

Mix Dry Ingredients
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt until well combined.

Combine Mixtures
Gradually add the wet ingredients to the dry ingredients, mixing until just blended. Do not overmix.

Add Carrots and Pineapple
Fold in the grated carrots, crushed pineapple, and walnuts (if using) until evenly distributed.

Bake the Cakes
Divide the batter evenly between the prepared pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Cool the Cakes
Remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then, transfer to wire racks to cool completely.

Make the Frosting
In a mixing bowl, beat the cream cheese and softened butter together until smooth and creamy.

Gradually add the powdered sugar and vanilla extract, mixing until well incorporated and fluffy.

Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of frosting on top, then place the second layer on top and frost the top and sides of the cake.
