Cake Preparation

Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients

In a large mixing bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt until well combined.

Combine Wet Ingredients

In another bowl, beat together the vegetable oil and eggs until smooth. Stir in the grated carrots, crushed pineapple, and chopped pecans.

Combine Mixtures

Gradually pour the wet ingredients into the dry ingredients, mixing until just combined. Do not overmix.

Bake the Cake

Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Cool the Cake

Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Prepare the Filling

In a medium bowl, beat together the softened cream cheese and butter until smooth and creamy.

Add Sugar and Vanilla

Gradually add the powdered sugar and vanilla extract, mixing until fully incorporated and fluffy.

Assembling the Cake

Layer the Cake

Once the cakes are completely cooled, place one layer on a serving plate. Spread a layer of cream cheese filling on top.

Top with Second Layer

Place the second cake layer on top and spread the remaining cream cheese filling over the top and sides of the cake.

Garnish the cake with chopped pecans and carrot shavings, if desired.
