Preparation of Potatoes

Roast the Potatoes
Preheat the oven to 425°F (220°C). Toss the cubed potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread them on a baking sheet in a single layer and roast for 25-30 minutes, or until golden and crispy, turning once halfway through.

Cook the Shrimp
In a large skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Add the shrimp and Cajun seasoning. Cook until the shrimp turns pink and opaque, about 3-4 minutes. Remove from skillet and set aside.

Sauté the Spinach and Mushrooms
In the same skillet, add the sliced mushrooms and sauté for 3-4 minutes until they are tender. Add the fresh spinach and cook until wilted, about 2 minutes. Return the shrimp and scallops to the skillet and combine.
Making the Shellfish Cream Sauce

Prepare the Sauce
In a small saucepan, combine the shellfish stock and heavy cream. Bring to a gentle simmer over medium heat. Let it reduce slightly for about 5 minutes. Season with salt and black pepper to taste.

Plate the Dish
To serve, place a generous portion of the sautéed seafood and vegetables on a plate. Top with roasted potatoes and drizzle with the shellfish cream sauce. Enjoy your Seafood Americana!
