Prepare the Scallops
Rinse the sea scallops under cold water and pat them dry with paper towels. Make sure there is no excess moisture as this will prevent a good sear.

Seasoning
In a small bowl, mix together salt, black pepper, paprika, cayenne pepper, and dried thyme (if making blackened scallops).

Pan Seared
Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the scallops to the pan, ensuring they are not overcrowded. Sear for about 2-3 minutes on each side until golden brown. Add butter and garlic in the last minute of cooking, allowing it to melt and baste the scallops. Finish with fresh lemon juice before serving.

Blackened
Coat the scallops with the seasoning mix prepared earlier. Heat a cast iron skillet over high heat until very hot. Add olive oil and place the scallops in the skillet, cooking for 1-2 minutes on each side until a dark crust forms. Add butter and garlic in the last minute and drizzle lemon juice before serving.
