Beer Batter Preparation

Prepare the Beer Batter
In a mixing bowl, combine the Sam Adams® beer, all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Whisk until smooth and let it rest for about 15 minutes.

Prepare the Fish
While the batter rests, pat the fish fillets dry with paper towels and season them lightly with salt and pepper.

Cut and Fry the Potatoes
Peel the russet potatoes and cut them into thin strips. Rinse under cold water to remove excess starch and pat dry. Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels, then sprinkle with sea salt.

Form Hush Puppies
Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Heat the vegetable oil for frying in a deep pan or fryer to 350°F (175°C). Drop small spoonfuls of the mixture into the hot oil and fry until golden brown, about 3-4 minutes. Drain on paper towels.
Coleslaw Preparation

Prepare the Coleslaw
In a large bowl, combine the shredded cabbage and shredded carrot. In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, and salt. Pour the dressing over the cabbage mixture and toss to combine. Let it chill in the refrigerator for at least 30 minutes before serving.

Fry the Fish
Heat oil in a deep fryer or pot to 350°F (175°C). Dip the seasoned fish fillets in the beer batter, allowing excess to drip off, then carefully place them in the hot oil. Fry until golden brown and cooked through, about 4-5 minutes. Remove and drain on paper towels.
