    Prepare the Potatoes

    Preheat your oven to 425°F (220°C). Wash and scrub the potatoes thoroughly, then cut them into evenly sized chunks, about 1 inch in size. This ensures they cook evenly.

    In a large mixing bowl, toss the potato chunks with 2 tablespoons of olive oil, salt, black pepper, and garlic powder until evenly coated.

    Roast the Potatoes

    Spread the seasoned potatoes in a single layer on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until they are golden brown and crispy, flipping them halfway through.

Cooking the Steak

    Prepare the Steak

    While the potatoes are roasting, remove the New York Strip steak from the refrigerator and allow it to come to room temperature (about 20-30 minutes). This helps it cook more evenly.

    Season the Steak

    Rub the steak with the remaining 1 tablespoon of olive oil, then season generously with salt, black pepper, and fresh rosemary on both sides.

    Cook the Steak

    Heat a cast-iron skillet or heavy-bottom pan over high heat. Once hot, add the steak and sear for about 4-5 minutes on one side until a crust forms. Flip the steak and cook for an additional 3-4 minutes for medium-rare, or longer for desired doneness.

    Remove the steak from the skillet and let it rest on a cutting board for at least 5 minutes before slicing. This allows the juices to redistribute.

Cooking the Asparagus

    While the steak is resting, rinse the asparagus under cold water and trim the woody ends, about 1-2 inches from the bottom.

    In the same skillet used for the steak, add a little more olive oil if needed and turn the heat to medium. Add the asparagus and cook for about 4-5 minutes, tossing occasionally, until tender and slightly charred.

    Season the asparagus with salt and black pepper to taste before serving.
