Method

Preparing the Chicken

    Marinate the Chicken

    In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and black pepper. Add the chicken breasts, ensuring they are well coated. Cover and marinate in the refrigerator for at least 30 minutes.

    Cook the Chicken

    Preheat a grill or skillet over medium-high heat. Remove chicken from marinade and cook for 6-7 minutes per side or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest.

Preparing the Topping

    Make the Topping

    In a bowl, combine sun-dried tomatoes, capers, artichoke hearts, and fresh basil. Mix well and set aside.

Making the White Wine Butter Sauce

    Prepare the Sauce

    In a saucepan over medium heat, melt the butter. Add minced garlic and sauté until fragrant, about 1 minute. Pour in the white wine, lemon zest, salt, and black pepper. Simmer for 5 minutes until slightly reduced.

Making the Mashed Potatoes

    Cook the Potatoes

    In a large pot, boil potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.

    Mash the Potatoes

    Add butter, milk, salt, and black pepper to the potatoes. Mash until creamy and smooth. Adjust seasoning as needed.

Serving

    Plate the Dish

    Slice the grilled chicken and place on a plate. Top with the Mediterranean mixture and drizzle with the white wine butter sauce. Serve alongside the creamy mashed potatoes.
