Prepare the Lobster
Bring a large pot of salted water to a boil. Add the whole Maine lobster and cook for about 8-10 minutes, or until it turns bright red. Remove it from the pot, let it cool, and then remove the meat from the claws and tail. Set aside the lobster meat and keep the shells.

Make the Stock
Add the lobster shells to the pot and pour in the dry white wine. Cook for an additional 3-5 minutes. Then, add the chicken stock, bay leaf, thyme, salt, and black pepper. Bring to a simmer and cook for 30 minutes.

Blend the Bisque
After simmering, remove the pot from heat. Remove the bay leaf and lobster shells. Use an immersion blender to puree the soup until smooth. You can also transfer it to a blender in batches.

Finish with Cream
Return the bisque to low heat. Stir in the heavy cream and adjust seasoning if needed. Allow it to heat through for about 5 minutes.

Add Lobster Meat
Finally, add the reserved lobster meat to the bisque and simmer for an additional 2-3 minutes until heated.

Ladle the lobster bisque into bowls. Garnish with fresh thyme or a drizzle of cream if desired. Serve hot.
