Method

Cooking the Pasta

    Boil the Pasta

    In a large pot, bring 4 cups of water to a boil. Add 2 cups of elbow macaroni and a pinch of salt. Cook according to package instructions until al dente, usually about 8-10 minutes. Stir occasionally.

    Drain the Pasta

    Once cooked, drain the macaroni in a colander and set aside. Do not rinse to preserve the starch that helps the cheese sauce adhere.

Making the Cheese Sauce

    Melt the Butter

    In the same pot (or a separate saucepan), melt 2 tablespoons of butter over medium heat until fully melted and bubbly.

    Create the Roux

    Add 2 tablespoons of all-purpose flour to the melted butter. Stir constantly for about 1-2 minutes until the mixture is golden and bubbly, creating a roux.

    Add Milk

    Gradually whisk in 2 cups of milk, ensuring there are no lumps. Continue to whisk until the sauce thickens, about 3-5 minutes.

    Add Cheese and Seasonings

    Lower the heat and gradually add 2 cups of shredded cheddar cheese, stirring until melted and smooth. Season with 0.5 teaspoon of salt, 0.25 teaspoon of black pepper, 0.5 teaspoon of garlic powder, and 0.5 teaspoon of mustard powder. Stir until well combined.

Combining Ingredients

    Add the drained macaroni back into the pot with the cheese sauce. Stir until all the pasta is well coated with the cheese sauce.
