Method

Preparing the Chips

  1. 1

    Cutting the Potatoes

Peel the potatoes and cut them into thick strips (about ½ inch wide).

  2. 2

    Soaking the Potatoes

Place the cut potatoes in a bowl of cold water for at least 30 minutes to remove excess starch. Drain and pat dry with a clean towel.

  3. 3

    First Fry

Heat 2 cups of oil in a deep frying pan over medium heat. Fry the potatoes in batches for about 5-7 minutes until they are soft but not browned. Remove from oil and drain on paper towels.

Preparing the Fish

  1. 4

    Making the Batter

In a bowl, mix the flour, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth.

  2. 5

    Coating the Fish

Dredge each fish fillet in the batter, ensuring it is completely coated.

Frying

  1. 6

    Heating the Oil

In a large pot or deep fryer, heat 4 cups of oil to 350°F (175°C).

  2. 7

    Frying the Fish

Carefully add the battered fish fillets to the hot oil, frying for 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

  3. 8

    Second Fry for Chips

Increase the oil temperature to 375°F (190°C) and fry the pre-cooked chips for another 3-5 minutes until crispy and golden. Drain on paper towels and sprinkle with salt.

Tartar Sauce (optional)

  1. 9

    Mixing the Sauce

In a small bowl, combine mayonnaise, chopped dill pickles, lemon juice, and capers (if using). Mix well and refrigerate until ready to serve.
