Filet Mignon

Prepare the Steak
Remove the filet mignon from the refrigerator and let it come to room temperature for about 30 minutes before cooking.

Rub the filet mignon with olive oil, then season generously with salt, black pepper, and fresh rosemary on both sides.

Remove the filet mignon from the grill and let it rest for at least 5 minutes before slicing.

Preheat Oven
Preheat the oven to 425°F (220°C).

Prepare the Potatoes
Wash the baby potatoes and cut them in half. In a bowl, toss the potatoes with olive oil, salt, garlic powder, and dried oregano until evenly coated.

Spread the potatoes on a baking sheet in a single layer and roast in the preheated oven for 25-30 minutes, or until golden brown and tender, flipping halfway through.
