Method

Preparation

  1. 1

    Preheat Oven

Preheat your oven to 200°C (400°F) and prepare four ramekins by greasing them with butter and dusting with flour to prevent sticking.

  2. 2

    Melt Chocolate and Butter

In a medium saucepan, combine the dark chocolate and unsalted butter. Melt them together over low heat, stirring until smooth. Remove from heat and let it cool slightly.

  3. 3

    Mix Eggs and Sugar

In a separate bowl, whisk together the granulated sugar and large eggs until the mixture is pale and slightly thickened, about 3-4 minutes.

  4. 4

    Combine Mixtures

Gradually add the melted chocolate mixture to the eggs and sugar, whisking continuously to combine. Add the vanilla extract and a pinch of salt. Mix well.

  5. 5

    Add Flour

Sift the all-purpose flour over the chocolate mixture and gently fold it in until just combined. Be careful not to overmix.

  6. 6

    Fill Ramekins

Evenly distribute the batter among the prepared ramekins, filling each about 3/4 full.

Baking

  1. 7

    Bake

Place the ramekins in the preheated oven and bake for 12-14 minutes, or until the edges are firm but the center is still soft.

  2. 8

    Cool Slightly

Remove the ramekins from the oven and let them cool for about 1 minute. This will help the cakes release easily.

  3. 9

    Invert and Serve

Carefully invert each ramekin onto a plate. Dust with powdered sugar and serve with a scoop of vanilla ice cream, if desired.
