Method

Preparation of Ingredients

  1. 1

    Prepare the Cedar Plank

Soak the cedar planks in water for at least 1 hour before grilling to prevent them from burning.

  2. 2

    Prepare the Salmon

Pat the salmon fillets dry with a paper towel. Season both sides with salt and pepper to taste.

  3. 3

    Spread the Pesto

Spread 1/4 cup of sun dried tomato pesto evenly over each salmon fillet.

  4. 4

    Prepare Goat Cheese

Crumble the goat cheese into small pieces and set aside.

  5. 5

    Chop Parsley

Rinse the parsley under cold water, pat dry, and chop finely. Set aside.

  6. 6

    Prepare the Bread

Slice the crusty bread into thick slices, about 1 inch wide.

Grilling the Salmon

  1. 7

    Preheat the Grill

Preheat your grill to medium-high heat.

  2. 8

    Place Salmon on Cedar Plank

Place the soaked cedar planks on the grill grates. Once they start to smoke, carefully place the salmon fillets on top of the planks.

  3. 9

    Add Goat Cheese and Parsley

Sprinkle the crumbled goat cheese and chopped parsley over the salmon fillets.

  4. 10

    Grill the Salmon

Close the grill lid and cook the salmon for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

Serving

  1. 11

    Serve the Salmon

Carefully remove the cedar planks from the grill and transfer the salmon to a serving plate.

  2. 12

    Accompany with Bread

Serve the grilled salmon with slices of the crusty bread on the side.

  3. 13

    Garnish

Garnish with additional chopped parsley if desired.
