Method

Preparing the Cedar Plank Salmon

    Soak the Cedar Plank

    Submerge the cedar plank in water for at least 1 hour before grilling to prevent it from burning.

    Prepare the Salmon

    Pat the salmon fillet dry with paper towels. Spread the sundried tomato pesto evenly over the top of the salmon. Place the salmon skin-side down on the soaked cedar plank.

    Add Balsamic Glaze and Goat Cheese

    Drizzle the balsamic glaze over the salmon. Crumble the goat cheese on top of the salmon.

    Prepare for Grilling

    Preheat the grill to medium-high heat. Place the soaked cedar plank with the salmon directly on the grill grates.

Grilling the Salmon

    Grill the Salmon

    Close the grill lid and cook for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

Grilling the Vegetables

    Prepare the Vegetables

    Slice the zucchini and bell peppers into strips. In a bowl, toss the vegetables with olive oil, salt, and black pepper.

    Grill the Vegetables

    Place the vegetables on the grill and cook for about 8-10 minutes, turning occasionally until they are tender and have grill marks.

Roasting the Potatoes and Asparagus

    Prepare the Potatoes

    Preheat the oven to 425°F (220°C). Cut baby potatoes in half and toss with olive oil, garlic powder, salt, and black pepper. Spread them on a baking sheet.

    Roast the Potatoes

    Roast the potatoes in the preheated oven for 20 minutes.

    Prepare the Asparagus

    Trim the ends of the asparagus and toss them with olive oil, salt, and black pepper.

    Add Asparagus to the Oven

    After 20 minutes, add the asparagus to the baking sheet with the potatoes and roast for an additional 10 minutes until both are tender.
