Calamari Preparation

Prepare the Squid
Rinse the calamari rings under cold water and pat them dry with paper towels. Make sure they are well-dried to avoid excess moisture.

Mix the Coating
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well until evenly combined.

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C). You can check the temperature with a kitchen thermometer or by dropping a small piece of batter into the oil; it should sizzle.

Fry the Calamari
Carefully add a few calamari rings to the hot oil, being careful not to overcrowd the pan. Fry for 2-3 minutes or until golden brown. Use a slotted spoon to remove them and place them on paper towels to drain excess oil.

Add Tomatoes and Spices
Stir in the canned crushed tomatoes, oregano, basil, salt, black pepper, red pepper flakes, and sugar. Mix well.

Simmer the Sauce
Bring the sauce to a gentle simmer. Let it cook for about 15-20 minutes, stirring occasionally, until it thickens slightly and the flavors meld together.
