    Clean and prepare

    Wipe mushrooms clean with a damp paper towel or very briefly rinse and pat dry. Trim any tough stem ends. If mushrooms are large (over 1 inch), halve or quarter them so pieces are roughly bite-sized.

    Place the mushrooms in a bowl and toss with 1 tablespoon lemon juice, 1 teaspoon kosher salt, and 1/2 teaspoon freshly ground black pepper. Let sit 5–10 minutes while you prepare the breading — this seasons the interior and helps draw out excess moisture.

Breading station

    Set up three shallow dishes: one with the 1/2 cup flour; second with the wet mixture (see below); third with the breadcrumb mixture.

    Make breadcrumb mix

    In a shallow bowl combine 3/4 cup breadcrumbs, 2 tablespoons grated Parmesan (if using), 1/2 teaspoon garlic powder, 1/2 teaspoon paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix well and spread slightly to allow easy coating.

Wet coating

    In a medium bowl whisk together 2 large eggs, 2 tablespoons milk (or buttermilk), and 1/2 teaspoon Dijon mustard until homogenous. This will be your wet dip to help the breadcrumbs adhere.

Frying & finishing

    Heat 1 cup neutral oil in a heavy skillet (cast iron or stainless) over medium-high heat until it reaches 350°F (175°C) or a small breadcrumb sizzles and browns in about 10–15 seconds. Use an instant-read thermometer if you have one. If you don't, maintain a medium-high flame and test with one piece.

    Bread the mushrooms

    Working in batches to avoid overcrowding, dredge each mushroom first in the flour, shaking off excess; dip into the egg mixture, letting excess drip off; then press into the breadcrumb mixture to fully coat. Place breaded mushrooms on a wire rack or tray while you finish the rest.

    Carefully add a single layer of breaded mushrooms to the hot oil (do not drop them in from high — lower with tongs). Fry, turning occasionally, until golden brown and crisp, about 3–4 minutes per batch depending on mushroom size. Maintain oil temperature between 325–350°F; adjust heat as needed.

    Use a slotted spoon or spider to transfer fried mushrooms to a paper-towel–lined plate or wire rack. Immediately season lightly with a pinch of salt. Repeat with remaining mushrooms, adding more oil if needed to keep level about 1/4 inch in skillet for even frying.

    When all batches are done, let mushrooms rest 2 minutes to crisp. Sprinkle chopped parsley if using and serve with lemon wedges to squeeze over just before eating.
