Prepare the Chocolate Mixture
Preheat the oven to 200°C (392°F). Grease four ramekins with butter and dust with cocoa powder. Melt the dark chocolate and butter together in a heatproof bowl over simmering water or in the microwave until smooth.
Bake
Divide the batter evenly among the prepared ramekins. Bake for 10-12 minutes until the edges are set but the center is still soft. Allow to cool for 1 minute before inverting onto plates.
Spent Coffee Ice Cream
Make the Ice Cream Base
In a medium saucepan, combine heavy cream, whole milk, spent coffee grounds, sugar, vanilla extract, and a pinch of salt. Heat over medium heat until the mixture is hot but not boiling. Remove from heat and allow to steep for 30 minutes.
Strain and Chill
Strain the mixture through a fine-mesh sieve to remove the coffee grounds. Chill the mixture in the refrigerator for at least 2 hours or until completely cold.
Churn
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer to a container and freeze until firm.

Place the warm chocolate fondant on a plate, top with a scoop of spent coffee ice cream, and drizzle with extra virgin olive oil before serving.
