Prepare Duck Prosciutto

Cure the Duck

In a bowl, mix salt, sugar, and black pepper. Rub the mixture into the duck breast and cover. Refrigerate for 24-48 hours.

Dry the Duck

After curing, rinse the duck breast and pat it dry. Hang it in a cool, dry place for 1-2 weeks until firm.

Make Ravioli Dough

Prepare the Dough

On a clean surface, mound the flour and create a well in the center. Add eggs and salt. Gradually mix flour into the eggs until a dough forms.

Knead the Dough

Knead the dough for about 10 minutes until smooth. Wrap in plastic and let it rest for 30 minutes.

Prepare Filling

Make the Filling

In a food processor, blend fresh peas, ricotta, lemon zest, mint, salt, and pepper until smooth.

Assemble Ravioli

Roll Out Dough

Divide the dough into quarters. Roll out each piece into thin sheets using a pasta machine or rolling pin.

Fill and Shape Ravioli

Place small mounds of filling on one sheet, brush edges with water, then fold over and seal. Cut into desired shapes.

Make the Pea Parmesan Emulsion

Blend fresh peas, grated Parmesan, olive oil, salt, and pepper until smooth. Adjust seasoning to taste.

Cook Ravioli

Boil the Ravioli

Bring a pot of salted water to a boil. Cook the ravioli for 3-4 minutes or until they float to the surface.

Serve
