Method

Prepare the Salad

Step 1: Cook the Lobster

If using live lobster, cook it in boiling salted water for 8-10 minutes until fully cooked. Remove from water, cool, and remove the meat from the shell. Chop into bite-sized pieces.

Step 2: Combine Ingredients

In a mixing bowl, combine the lobster meat, hearts of palm, sliced fennel, citrus segments, and dill. Season with salt and pepper to taste.

Make the Lemon Aioli

Step 3: Mix Aioli

In a small bowl, whisk together mayonnaise, lemon juice, minced garlic, olive oil, and salt until smooth. Adjust seasoning as needed.

Prepare the Verjus Dressing

Step 4: Whisk Dressing

In another small bowl, whisk together verjus, olive oil, honey, and salt until well combined.

Assemble and Serve

Plate the lobster salad mixture and drizzle with verjus dressing. Serve with a dollop of lemon aioli on the side.
