Wash Spinach
Start by washing the fresh spinach thoroughly and set it aside.
Prepare Cucumber
Peel and slice the cucumber into thin rounds for easier blending.
Blend Ingredients
In a blender, combine the fresh spinach, cucumber slices, lemon juice, and coconut water. Blend until smooth.
Strain Mixture
Strain the mixture through a fine mesh sieve or cheesecloth into a shaker to remove any pulp.
Mix Cocktail
Add El Gobernador Pisco and celery bitters to the shaker. Fill with ice and shake well.
Serve Cocktail
Strain the cocktail into a chilled glass over fresh ice.
Garnish
Garnish with a cucumber slice or a sprig of fresh spinach if desired.
