Blini Preparation

Make the Batter

In a bowl, combine buckwheat flour, all-purpose flour, milk, eggs, yeast, sugar, and salt. Mix until smooth.

Let it Rise

Cover the bowl with a cloth and let it rise in a warm place for about 1 hour, or until doubled in size.

Cook the Blini

In a skillet, melt butter over medium heat. Pour small amounts of batter to form blinis, cooking until bubbles form, then flip and cook until golden on both sides.

Chive Crème Preparation

Mix Ingredients

In a small bowl, combine sour cream, chopped chives, lemon juice, and salt. Mix until well blended.

Assembly

Serve

Place a blini on a plate, add a dollop of chive crème, and top with black caviar. Serve immediately.
