Tenderloin Preparation

Cook the Tenderloin

Season the beef tenderloin with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the tenderloin for about 3-4 minutes on each side, or until it reaches your desired doneness. Let it rest for 5 minutes before slicing.

Bordelaise Sauce Preparation

Make the Bordelaise Sauce

In the same skillet, add shallots and cook until translucent. Pour in the red wine and reduce by half. Add beef stock, thyme, and bay leaf. Simmer until thickened. Stir in butter before serving.

Gratin Croustillant Preparation

Prepare the Gratin

Preheat oven to 375°F (190°C). Slice potatoes thinly and layer them in a baking dish. Pour heavy cream over the potatoes, season with salt, pepper, and nutmeg. Top with Gruyère cheese and bake for 30-35 minutes until golden and bubbly.

Scallion Cream Preparation

In a bowl, mix sour cream, chopped scallions, and lemon juice. Season with salt and pepper to taste.
