Prime Rib

Prepare the Prime Rib

Preheat your oven to 450°F (230°C). Rub the prime rib roast with olive oil, then season generously with kosher salt, black pepper, garlic powder, and fresh rosemary. Place the roast in a roasting pan.

Roast the Prime Rib

Roast in the preheated oven for 20 minutes. Reduce the temperature to 325°F (160°C) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches your desired doneness (130°F for medium-rare).

Rest the Roast

Remove the roast from the oven and let it rest for at least 20 minutes before slicing.

Bake the Potatoes

While the roast is resting, scrub the russet potatoes and pierce them with a fork. Rub with butter and salt, then bake at 400°F (200°C) for 45-60 minutes until tender.

Make the Scallion Cream

In a bowl, mix cream cheese, sour cream, chopped scallions, and garlic powder until smooth. Adjust seasoning to taste.

Peel and slice the carrots. In a skillet, melt butter, add carrots, brown sugar, and salt. Cook until the carrots are tender and glazed, about 15 minutes.

Yorkshire Pudding

Make Yorkshire Pudding Batter

In a bowl, whisk together flour, eggs, milk, and salt until smooth. Let it rest for 30 minutes.

Bake Yorkshire Pudding

Preheat a muffin tin with beef drippings in each cup. Pour the batter into the hot cups and bake at 425°F (220°C) for 20-25 minutes until puffed and golden.
