Method

Rice preparation

    Season the sushi rice

    If your sushi rice is freshly cooked, let it cool slightly to warm (not hot). In a small bowl combine rice vinegar, sugar and salt and stir until sugar dissolves. Gently fold 2 tablespoons of cooked, short-grain sushi rice with 1/2 teaspoon of the vinegar mixture until evenly seasoned. Keep rice slightly warm; cover with a damp cloth to prevent drying.

    Portion and shape: Wet your palms with water mixed with a tiny pinch of salt to prevent sticking. Take the 2 tablespoons of seasoned rice and form it into a compact, oblong mound about 2 inches (5 cm) long and 1 inch (2–3 cm) wide and 1/2 inch (1–1.5 cm) tall. Press gently so grains hold together but are not smashed.

Kani (imitation crab) preparation

    Prepare the kani: If using a full crab stick, slice the stick lengthwise and pull apart into two thinner strips. Use half a stick (or one pulled strip) for one nigiri. If the kani is pre-shaped, trim to match the rice length (about 2 inches). Slightly wet the kani surface so it drapes neatly over the rice.

    Optional warming/texture: Briefly sear the top of the kani with a kitchen torch for 1–2 seconds to add a touch of warmth and a slightly charred flavor (optional). Allow to cool 5–10 seconds before placing on rice.

Assembly

    Add wasabi: If you like wasabi, place a small dab (about 1/4 teaspoon) on the top center of the rice mound or lightly spread between the rice and the kani.

    Place the kani: Drape the prepared kani strip over the rice mound so it covers the top and slightly wraps down the sides. Press gently with your thumbs — one hand on top and two fingers supporting the bottom — to adhere the kani to the rice. The pressure should be firm enough to hold shape but gentle to keep rice texture.

    Optional garnish: Sprinkle a tiny pinch (about 1/8 tsp) of toasted sesame seeds or place a sliver of scallion on top for color and aroma.

Serving

    Plate and serve: Place the finished kani nigiri on a plate. Serve immediately with soy sauce and pickled ginger on the side. For eating, dip the kani side (not the rice side) lightly into soy sauce to avoid soaking the rice.

    Storage note: Nigiri is best served immediately. If you must hold it, cover loosely with plastic wrap at room temperature and consume within 1 hour to preserve texture.
