Proof the yeast

Combine warm milk (about 100–110°F / 37–43°C) with sugar and active dry yeast in a small bowl. Stir and let sit 8–10 minutes until foamy.

Mix dry ingredients

In a large mixing bowl, whisk together all-purpose flour, salt, baking powder and baking soda.

Make a well in the flour, add yogurt, oil, and the foamy yeast-milk. Mix with a spoon until a shaggy dough forms. If dough feels too dry, add up to 2–3 tablespoons warm water; if too sticky, dust with a little flour.

Knead the dough on a lightly floured surface for 6–8 minutes until smooth and elastic. Alternatively, knead in a stand mixer with dough hook for 5 minutes.

Lightly oil a bowl, place dough inside, turn to coat. Cover with a damp cloth or plastic wrap and let rise in a warm place for 1–1.5 hours or until doubled in size.

Onion Filling

While dough rises, prepare the filling. Heat 1 tablespoon oil in a skillet over medium heat. Add ajwain or cumin seeds and let them sizzle for 10–15 seconds.

Add finely chopped onions and a pinch of salt; sauté for 4–6 minutes until the onions soften but do not brown heavily—aim for translucent and slightly wilted.

Add chopped green chili, chopped cilantro, red chili powder, garam masala and amchur or lemon juice. Cook together for 1 minute to combine flavors, then remove from heat and let cool to room temperature.

Taste and adjust seasoning. The filling should be moist but not wet; if very wet, squeeze lightly in a strainer or cook off excess moisture briefly.

Shaping & Cooking

Punch down the risen dough and divide into 8 equal portions (for 8 medium kulchas). Roll each portion into a smooth ball and cover with a cloth to keep from drying.

Working with one ball at a time, flatten into a 4–5 inch disc. Place about 2 tablespoons of the cooled onion filling in the center. Bring edges together to seal, pinching tightly so filling is enclosed.

Gently flatten the stuffed ball with your palm, then roll carefully with a rolling pin into a 6–7 inch circle. If filling starts to leak, seal and re-roll gently. Dust with flour as needed to prevent sticking.

Preheat a heavy skillet or cast-iron griddle over medium-high heat. When hot, place the rolled kulcha onto the dry skillet. Cook 1–2 minutes until bubbles form and underside has golden brown spots.

Flip and cook the second side 1–2 minutes. Brush the cooked side with melted butter/ghee, then flip again to allow butter to set and give slight charring—press gently with a spatula for even contact.

If using an oven or tandoor: after initial skillet sear, you may transfer to a preheated 475°F (245°C) oven on a hot baking stone or sheet for 3–4 minutes to finish. Alternatively, finish directly on a hot skillet until both sides are done and slightly charred.

Repeat with remaining dough and filling. Brush each finished kulcha with more melted butter or ghee and sprinkle with chopped cilantro and sesame seeds if using.

Serve

Serve onion kulchas hot, ideally with chole (spiced chickpea curry), raita, pickle or a side of plain yogurt and lemon wedges.
