Method
For the honey-ginger syrup
Make syrup
Combine 0.5 cup water and 0.5 cup honey in a small saucepan over medium heat. Add the sliced fresh ginger. Bring gently to a simmer, stirring to dissolve the honey. Simmer for 5 minutes to infuse the ginger, then remove from heat and let steep for 15–20 minutes (longer for stronger ginger). Strain out the ginger and cool. Refrigerate remaining syrup in a sealed container for up to 2 weeks.
For the cocktail
Chill glass
If desired, chill an old-fashioned glass or rocks glass by filling with ice and setting aside while you mix the drink.
Combine ingredients
In a cocktail shaker add 2 oz blended Scotch, 0.75 oz fresh lemon juice, 0.75 oz honey-ginger syrup, and a generous scoop of ice. Secure the shaker lid.
Shake
Shake vigorously for about 12–15 seconds until the shaker is well chilled and slightly frosted on the outside.
Strain
Discard the ice from the chilled glass (if you chilled it). Strain the shaken cocktail over fresh large ice in the glass using a Hawthorne or fine strainer.
Float smoky Scotch
Very gently pour 0.5 oz Islay single malt over the back of a bar spoon onto the top of the drink so it floats as a smoky layer. Alternatively, add the Islay to the shaker with the other ingredients if you prefer the smoke integrated rather than as a float.
Garnish and serve
Garnish with a slice of candied or fresh ginger and/or a lemon wheel or twist. Serve immediately.
