Cocktail

1

Prepare glass (optional)

If using a smoked salt rim, rub a fresh orange wedge around the lip of a rocks glass and dip rim lightly into a shallow plate of smoked salt. Set glass aside.

2

Combine spirits and sweetener

In a mixing glass or cocktail shaker without ice, add 1 oz añejo tequila, 0.5 oz reposado mezcal, and 0.25 oz agave nectar. This small pre-mix helps the agave incorporate evenly.

3

Add bitters and ice

Add 2 dashes angostura bitters and 1 dash orange bitters to the mixing glass. Fill the mixing glass with plenty of ice (about 6-8 large cubes).

4

Stir

Stir the mixture briskly for 20–30 seconds (roughly 15–20 full rotations) until well chilled and slightly diluted — the outside of the mixing glass should feel very cold and slightly frosted.

5

Strain and serve

Place a single large ice cube in the prepared rocks glass. Strain the stirred cocktail over the ice cube.

6

Garnish

Express the oils of an orange peel over the drink by holding peel skin-side down over the glass and giving it a firm twist (or briefly flame the peel with a lighter for extra aroma). Rub the peel along the rim and drop it into the glass as garnish.

7

Enjoy

Serve immediately. Sip slowly to appreciate the balance of smoky mezcal, rounded tequila, bitters, and agave sweetness.
