Prepare glass

Chill a highball or Collins glass by filling it with ice and set aside while you assemble the drink. This keeps the cocktail properly cold without over-diluting it when served.

Combine base ingredients

Discard the ice from the chilled glass. In a mixing glass or shaker filled with fresh ice, pour 2 oz Death's Door gin and 0.5 oz fresh lime juice. Add 1/4 teaspoon (about 1–2 dashes' worth) of the house-made limited edition Angostura bitters. Briefly stir the mixture for about 10–12 seconds to chill and dilute slightly.

Build and top

Fill the chilled serving glass about three-quarters full with fresh ice. Strain the gin-bitters-lime mixture into the serving glass. Add 3 oz cherry tonic, gently pour 1 oz plain seltzer on top to lift aromatics and create a delicate sparkle. Stir once gently with a bar spoon (about 3 rotations) to combine without losing carbonation.

Garnish and finish

Express the oils of a grapefruit twist over the surface of the drink (or squeeze a lime wheel if you prefer) and rim the glass with the twist, then drop it into the drink. Add one Luxardo cherry if using. Serve immediately with a straw if desired.

Notes on balance

If you prefer a dryer drink, reduce the cherry tonic to 2.5 oz and increase seltzer to 1.5 oz. For a more aromatic bitters presence, add another scant 1/8 tsp of the limited Angostura bitters but taste carefully — bitters are potent.
