Pork Roast Preparation

Marinate the Pork

In a bowl, mix together minced garlic, lime juice, olive oil, salt, black pepper, cumin, and paprika. Rub the mixture all over the pork shoulder. Cover and marinate in the refrigerator for at least 2 hours or overnight for best flavor.

Roast the Pork

Preheat the oven to 325°F (165°C). Place the marinated pork in a roasting pan and cover with foil. Roast for about 3 hours or until the internal temperature reaches 190°F (88°C). Uncover for the last 30 minutes to develop a crust.

Add Hot Sauce

Once the pork is done, drizzle with your favorite hot sauce before serving.

Mashed Potatoes Preparation

Cook the Potatoes

In a large pot of salted boiling water, add the chopped potatoes. Cook until tender, about 15-20 minutes. Drain well.

Mash the Potatoes

Return the drained potatoes to the pot. Add butter, milk, salt, and black pepper. Mash until creamy and smooth.

Salad Preparation

Combine Salad Ingredients

In a large bowl, combine chickpeas, pineapple, hickory sticks, and torn lettuce. Drizzle with olive oil and season with salt and pepper. Toss to combine.
