Make the Churros Dough

Add eggs one at a time, mixing well after each addition. Stir in vanilla extract until the dough is smooth and elastic.

Heat the Oil

In a deep skillet or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Pipe the Churros

Transfer the dough to a piping bag fitted with a star tip. Carefully pipe the dough into hot oil, cutting it into 4-6 inch lengths with scissors.

Fry the Churros

Fry churros in batches for about 2-3 minutes on each side, or until golden brown. Remove and drain on paper towels.

Coat in Sugar

In a bowl, mix granulated sugar with ground cinnamon. While churros are still warm, roll them in the cinnamon sugar mixture until well coated.
