Method
Prepare and Steam
Bring water to simmer
Pour 1 cup of water into a medium saucepan fitted with a steamer basket (or use a wide sauté pan with a metal colander or bamboo steamer). Bring the water to a simmer over medium-high heat.
Add edamame and steam
Add 2 cups frozen edamame to the steamer basket (no need to thaw). Cover the pot and steam the edamame for 5–7 minutes, until the edamame are bright green and tender when pierced with a fork. If using in-pod edamame, steam 6–8 minutes.
Drain
Carefully remove the steamer basket and drain any excess water. Return the hot edamame to the warm saucepan or place them in a mixing bowl to catch the seasoning.
Season and Finish
While the edamame are still hot, sprinkle 1 teaspoon coarse kosher or sea salt and 1/4 teaspoon freshly cracked black pepper over them. Toss gently so the salt melts and distributes.
Drizzle 1 teaspoon toasted sesame oil and 1 teaspoon fresh lemon juice (if using) over the edamame. Add 1/8 teaspoon red pepper flakes and 1/2 teaspoon grated lemon zest if you want a bright, spicy finish. Toss gently to combine so the oil and seasonings coat the beans.
Taste and adjust seasoning: add a pinch more salt or a few drops more lemon juice if desired.
Garnish and Serve
Transfer the seasoned edamame to a small serving bowl. Sprinkle 1/2 teaspoon toasted sesame seeds and 1 tablespoon thinly sliced scallions over the top.
Serve immediately while warm as a small plate or snack. If serving in-pod edamame, provide a small bowl for discarded pods.
