Method
Prepare and steam
Bring water to a simmer
Add 1 cup water to a medium saucepan fitted with a steamer basket (or use a heatproof colander). Bring water to a gentle simmer over medium-high heat.
Steam edamame
Add 1 cup frozen edamame in pods to the steamer basket in a single layer. Cover and steam for 5–7 minutes, until pods are bright green and tender when a pod is squeezed. If using very large edamame or a full bag, increase steaming time by 1–2 minutes.
Drain
Carefully remove the steamer basket and drain any excess water. Transfer the hot steamed edamame to a large heatproof bowl.
Make spicy seasoning
While the edamame steams (or immediately after), combine the seasoning ingredients in a small bowl: 1 teaspoon sea salt, 1 tablespoon toasted sesame oil, 1 teaspoon soy sauce, 1/2 teaspoon rice vinegar, 1/2 teaspoon chili garlic sauce, 1/4 teaspoon crushed red pepper flakes, 1/8 teaspoon freshly ground black pepper, and 1/2 tablespoon fresh lime juice. Whisk or stir until homogeneous.
Taste the mixture and adjust heat or salt if desired: add a little more chili garlic sauce or red pepper flakes for heat, or a pinch more salt for seasoning. The mixture should be slightly salty, tangy, and spicy to complement the edamame.
Toss and finish
Pour the spicy seasoning over the hot steamed edamame and toss thoroughly with tongs or a spoon so the sauce coats the pods and the salt adheres. The heat from the edamame helps the flavors meld.
Sprinkle 1 teaspoon toasted sesame seeds and 1 tablespoon finely sliced scallion over the tossed edamame and give a final gentle toss to distribute.
Serve immediately in a bowl. To eat, squeeze each pod with your fingers or teeth to pop the beans out of the pod. Optionally serve with extra lime wedges and additional chili garlic sauce on the side.
