Basic Citrus Sorbet Base
Make a simple syrup
Combine 2 cups water and 1 cup granulated sugar in a medium saucepan. Add 2 tablespoons light corn syrup (helps inhibit large ice crystals). Bring to a simmer over medium heat, stirring until the sugar fully dissolves. Once dissolved, remove from heat.
Infuse with zest
Stir in 1 tablespoon finely grated citrus zest into the hot syrup. Let the mixture steep for 15 minutes so the citrus oils infuse the syrup.
Strain and cool
After steeping, strain the syrup through a fine-mesh sieve into a bowl to remove the zest solids. Press lightly on solids to extract flavor, then discard solids. Cool the syrup to room temperature (about 20–30 minutes) or chill in the refrigerator until cold (about 30–45 minutes) — the mixture must be cold before churning.
Add juice and finishing ingredients
Whisk 1 cup fresh citrus juice (strained of pulp and seeds) and a pinch of fine sea salt into the cooled syrup. If using, whisk in 1 tablespoon neutral-flavored alcohol (vodka) to improve scoopability by slightly lowering freezing point.
Chill thoroughly
Cover and chill the combined mixture in the refrigerator until it's very cold, at least 2 hours, preferably overnight. Cold base yields finer texture when churned.
Churn
Pour the chilled sorbet base into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency (typically 20–30 minutes, depending on machine).
Harden (optional)
Transfer churned sorbet to a shallow, airtight container. Smooth surface with a spatula, press a piece of parchment or plastic wrap directly onto the sorbet to reduce ice formation, and freeze until firm, about 2–4 hours. For immediate serving, you can serve at soft-serve consistency.
Serve
Scoop sorbet into chilled bowls or glasses. Garnish with mint leaves and fresh berries or citrus segments if desired. Letting very hard sorbet sit at room temperature 3–5 minutes before scooping will make portions easier to remove.

Mint leaves can be gently slapped between your palms to release aroma before using as garnish.
