Inspect mussels: discard any with broken shells or that do not close when tapped. Rinse under cold water and remove beards by pulling toward the hinge; scrub if necessary. Keep chilled until ready to cook.

Halve the lemon and set aside both halves for aburi and for finishing. Mince garlic and shallot, chop capers and parsley. If using bacon, cook until crisp, drain and chop.

Preheat a kitchen torch (or broiler) for aburi step, and preheat a large heavy-bottomed pot or deep sauté pan with a tight-fitting lid over medium heat.

Make Broth & Cook Mussels

Sweat aromatics

Add butter to the preheated pot. When melted, add the minced shallot and garlic. Sauté 1–2 minutes until fragrant and translucent but not browned.

Deglaze & dissolve miso

Pour in the white wine and mirin to deglaze the pan, scraping any fond. Add the water or seafood stock and reduce heat to medium. In a small bowl, whisk the shiro miso with 1–2 tablespoons of the warm liquid until smooth, then stir the dissolved miso back into the pot along with soy sauce and black pepper.

Add capers & bring to simmer

Stir in the chopped capers and bring the broth to a gentle simmer (not a rolling boil) to marry flavors, about 2–3 minutes.

Add mussels & steam

Increase heat to medium-high, add the cleaned mussels to the pot, cover with the lid and steam 4–6 minutes, shaking the pot once or twice, until most mussels have opened. Use tongs to remove any mussels that open early. Discard any mussels that remain closed after 6–7 minutes.

Finish broth

Remove the pot from heat and stir in the chopped parsley. Taste the broth and adjust seasoning with a touch more soy or a pinch of salt if needed.

Aburi Lemon

Brush the lemon halves lightly with olive oil and sprinkle the optional pinch of sugar on the cut sides. Using a kitchen torch, caramelize the cut surface until the sugars and citrus oils char and brown in places (about 30–60 seconds per half). If using a broiler, place cut-side up on a sheet pan 3–4 inches from heat and broil 2–3 minutes until browned — watch carefully to avoid burning.

Squeeze one aburi lemon half over the mussels just before serving; reserve the second half for guests to use as desired.

Focaccia & Assembly

Warm or lightly toast the focaccia. Brush with olive oil and sprinkle with sea salt. If using the optional chopped smoked bacon, scatter it over the cut focaccia or serve on the side.

Ladle mussels and broth into a wide shallow bowl or serve family-style in the pot. Arrange focaccia on the side. Garnish mussels with a few extra capers, chopped parsley, and a grind of black pepper. Serve with the aburi lemon halves for squeezing.

Enjoy immediately while mussels are hot. Use focaccia to soak up the miso-caper broth.
