Earl Grey Strawberry Panna Cotta

Earl Grey Strawberry Panna Cotta

Bloom gelatin

Sprinkle 1.5 tsp powdered gelatin evenly over 3 tbs cold water in a small bowl. Let sit 5–10 minutes until gelatin is spongy and opaque.

Infuse cream

Combine 1 cup whole milk, 1 cup heavy cream and 1 tbs granulated sugar in a small saucepan. Add 2 Earl Grey tea bags. Warm over medium heat until steam appears and sugar dissolves, stirring occasionally. Do not boil; heat to just under a simmer (about 175°F / 80°C).

Remove tea & add gelatin

Remove the pan from heat and steep the tea bags 3–4 minutes, pressing gently to extract flavor but not bitterness. Discard tea bags. Whisk the bloomed gelatin into the warm cream until fully dissolved. Stir in 1/2 tsp vanilla extract.

Prepare strawberry layer

While the panna cotta base cools slightly, puree 1 cup hulled fresh strawberries with 1 tsp lemon juice until smooth. If you prefer a glossy glaze, warm 1 tsp strawberry jam and whisk into the puree. Taste and adjust with a touch more sugar only if needed.

Strain and assemble

If desired, strain the cream mixture through a fine mesh to remove any tea particulate. Pour the cream mixture into 3 serving glasses, filling each about two-thirds full. Chill in refrigerator 1 hour until slightly set.

Add strawberry layer

Gently spoon or pour the strawberry puree on top of the partially set panna cotta, dividing evenly among 3 glasses. Return to refrigerator and chill at least 3–4 hours (preferably overnight) until fully set.

Finish

Before serving, garnish each panna cotta with a small fresh strawberry or a mint leaf.

Passion Fruit Mille-Feuille

Prepare puff pastry

Preheat oven to 400°F (200°C). Unfold 1 sheet puff pastry on a lightly floured surface and roll gently to even thickness. Using a ruler and a sharp knife or pizza cutter, cut pastry into 9 rectangles (for 3 stacks, 3 layers each) roughly 3x4 inches each.

Dock and sugar

Place rectangles on a parchment-lined baking sheet, prick all over with a fork (docking) to reduce excessive puffing. Brush lightly with a beaten egg wash (1 egg beaten) and sprinkle 1 tbs granulated sugar evenly over the top.

Bake

Bake for 12–16 minutes, rotating the sheet halfway, until puffed and golden brown. If the centers puff too much, press gently with a spatula while hot to flatten slightly for stacking. Cool completely on a rack; once cool, split layers horizontally with a serrated knife if needed to create flat surfaces (you should have 9 crisp layers).

Prepare passion fruit curd/gel

In a small saucepan, combine 3/4 cup passion fruit pulp with 1 tbs powdered sugar (or to taste). If you want a thicker spreadable consistency, make a slurry by mixing 1/2 tsp cornstarch with 1 tsp cold water, whisk into the passion fruit and bring to a gentle simmer for 1 minute until slightly thickened. Remove from heat and cool to room temperature.

Prepare pastry cream

If you haven't pre-made pastry cream, use a good-quality ready-made custard. For brighter flavor, fold 2–3 tbs of cooled passion fruit curd into 1.5 cups pastry cream to flavor it lightly (reserve some pure passion fruit curd for layering).

Assemble stacks

On a serving plate, place one puff pastry rectangle as the base. Pipe or spread about 1/4 cup flavored pastry cream evenly over it. Spoon roughly 1 tbsp passion fruit curd over the cream in a thin layer. Top with a second pastry rectangle. Repeat cream and curd layer, then top with the final pastry rectangle. Repeat to make 3 stacks (use remaining layers evenly).

Chill and finish

Chill assembled mille-feuille for 20–30 minutes to set. Just before serving, dust the tops with 1 tbs powdered sugar and sprinkle toasted sliced almonds if desired. For a glossy top, gently warm a teaspoon of passion fruit pulp and brush on top.

Assembly & Garnish (plating all three desserts)

Plate trio

Arrange a panna cotta glass, a passion fruit mille-feuille stack, and an additional garnish cluster on a dessert plate. Place the panna cotta to one side, the mille-feuille in the center, and a small pile of extra fresh berries beside them.

Garnish

Scatter toasted sliced almonds around the mille-feuille and tuck mint leaves near the panna cotta and berries for color. If desired, drizzle a teaspoon of remaining passion fruit pulp over the berries for brightness.

Serve

Serve chilled. The panna cotta can be made up to 48 hours ahead; the mille-feuille layers are best assembled the day of service for maximum crispness.
