Method
Shio Koji Marinated Duck
Prep and marinate
Score the skin of each duck breast in a crosshatch pattern without cutting into the meat. Pat breasts dry. Rub 1.5 tbs shio koji onto both sides of each breast (reserve remaining shio koji for possible finishing). Place duck in a shallow container, cover, and refrigerate for 8–24 hours to marinate.
Bring to room temperature
Remove duck from the refrigerator 30–45 minutes before cooking so it comes close to room temperature. This ensures even cooking.
Cook duck
Place a large, cold skillet (preferably cast iron) over medium heat. Lay duck breasts skin-side down (no oil yet) and render the fat slowly for about 8–12 minutes, pressing gently with a spatula so skin makes full contact. When the skin is deeply golden-brown and most fat has rendered, pour off excess fat, leaving about 1 tbs in the pan. Season the flesh side lightly with the reserved 0.5 tbs shio koji or 1 tsp kosher salt and freshly ground black pepper. Add 1 tbs neutral oil if needed. Flip the breasts and sear flesh side 2–3 minutes. Reduce heat to medium-low, add 1 tbs butter and baste the breasts for 1–2 minutes while spooning the butter over the top. Aim for an internal temperature of 58–62°C (136–144°F) for medium-rare to medium. Adjust to preference.
Rest
Transfer duck to a cutting board, tent loosely with foil, and rest for 8–10 minutes. Reserve pan with fond for the gastrique finish.
Ume (Plum) Gastrique
Prepare ume
If using whole umeboshi, chop pits out and mash flesh with a fork, pressing through a fine sieve if you want a smooth texture. If using ume paste, measure directly.
Cook gastrique
In a small saucepan, combine sugar and water over medium heat. Stir until sugar dissolves then bring to a gentle simmer. Add mashed ume, mirin, and rice vinegar. Simmer gently for 8–12 minutes, stirring occasionally, until mixture reduces by about one-third and coats the back of a spoon. Taste and add 1 tbs soy sauce to balance saltiness and deepen umami. If too tart, add up to 1 tsp more sugar. The final consistency should be slightly syrupy so it can glaze the sliced duck. Remove from heat and keep warm.
Finish with pan fond (optional)
After removing the duck, place the skillet over medium heat, add 2 tbs water to deglaze, scraping up fond. Pour the deglaze into the gastrique and simmer 1–2 minutes to integrate flavors, then strain if desired for a smooth sauce.
Shaved Carrot Medley & Garnish
Shave and quick-pickle
Using a vegetable peeler or mandoline, shave the carrots and daikon into long thin ribbons. Place ribbons in a bowl. Whisk together 2 tbs rice vinegar, 1 tsp sugar, 1 tsp salt until dissolved, then toss with the vegetables. Let sit 8–10 minutes to quick-pickle, then drain well and gently squeeze out excess liquid.
Dress and finish
Toss pickled ribbons with 1 tsp neutral oil and 1 tbs toasted sesame seeds. Adjust seasoning to taste. Keep chilled until plating. If using microgreens or mitsuba, have them washed and ready.
Finishing & Plating
Slice the rested duck breasts thinly on a bias. If sauce was strained, warm it gently. Arrange a small nest of shaved carrot and daikon ribbons on each plate. Fan 4–5 slices of duck breast over the ribbons.
Drizzle 1–2 tbs ume gastrique over the duck slices and around the plate. Spoon any beurre pan sauce (butter from pan deglaze mixed into gastrique if made) sparingly over the skin side for gloss. Scatter microgreens and a light sprinkle of toasted sesame seeds. Serve immediately.
Recommended serving temperature: warm; suggested doneness: medium-rare to medium (58–62°C / 136–144°F internal).
